- 3tablespoons lime juice

Description
A sweet, sticky jam with nutty and smoky flavours.
Method
Step 1 of 3
Sterilise a suitable jam jar by cleaning with boiled water and set to one side to cool. In a non-stick pan on a medium heat, fry the cherries while tossing for 5 minutes until they start to soften.
Step 2 of 3
Once they start to soften, mash them using a potato masher or other suitable tool. Add the sugar to the pan and mix thoroughly until the sugar has melted completely.
Step 3 of 3
Add the lime juice to the pan, cook out for a further 2 minutes or until it reaches a thick consistency. Mash thoroughly. Remove from the heat, allow to cool slightly and transfer to your sterilised sealable jar and store in the fridge.
