- 1 orange
- 2tablespoons soy sauce
- 1/2 cup brown sugar
- 1teaspoons Chinese five-spice
- 1kilograms frozen turkey breast roast, thawed (see Tip)
- 1/2 cup plain flour
- 2tablespoons cornflour
- 1/4 cup milk
- 2 free range eggs
- 2tablespoons vegetable oil
- 2 Lebanese cucumbers, cut into thin strips
- spring onions, finely shredded (to serve)
Description
Create an Asian feast to remember with this succulent turkey breast glazed with an exquisite blend of orange, soy sauce and fragrant chinese five-spice.
Method
Step 1 of 5
Preheat oven to 220°C/200°C fan-forced. Line a baking tray with baking paper.
Step 2 of 5
Cut a 10cm-long piece of peel from orange and juice orange. Place peel, orange juice, soy, sugar and five-spice in a saucepan over medium heat and cook, stirring, for 5 minutes or until sugar has dissolved. Increase heat to medium-high and bring to the boil. Boil for 10 minutes or until thickened.

Lay turkey, skin-side up, on baking tray. Pour half the glaze over turkey. Bake for 40 minutes, basting every 10 minutes with pan juices, or until cooked through. Cover loosely with foil and rest for 10 minutes.

Meanwhile, combine flours, milk, eggs, 1 tbs oil and 1/4 cup water in a bowl. Heat a small frying pan over medium heat. Brush pan with a little oil. Pour 2 tbs batter into pan, swirling to ensure batter covers base of pan. Cook for 1 minute. Flip and cook for a further 1 minute or until golden. Repeat with remaining oil and batter.

Slice turkey and serve with pancakes, cucumber, onion and remaining glaze.
