Creamy Marinated Feta Dressing
  • 180grams yarra valley cheese marinated feta
  • 1 cup mayonnaise
  • 1/2 cup buttermilk (Use sour cream as an alternative)
  • 1/4teaspoons garlic powder
  • 1/4teaspoons onion powder
  • 1 lemon, zested
Crisp Cos Salad
  • 3 leaves baby cos lettuce, washed & cut in half lengthways keeping the core intact
  • 1/2 bunch radishes, finely sliced
  • 1 bunch green shallots, finely sliced (optional)
  • 1 bunch spring onions, finely sliced (optional)
  • 180grams Yarra Valley Cheese Marinated Feta
  • 2tablespoons extra virgin olive oil
  • 1 brown onion, finely diced
  • 4 cloves garlic, crushed
  • 500grams chicken mince
  • 120grams fresh spinach, finely sliced
  • 4tablespoons basil, chopped
  • 1 lemon, zested
  • 1teaspoons sumac
  • 1/2teaspoons paprika
  • 1 pinch salt, to taste
  • 1 pinch pepper, to taste

Method

Step 1 of 7

Preheat oven to 200°C

Step 2 of 7

Combine chicken mince, onion, garlic, olive oil, Yarra Valley Cheese Marinated Feta, spinach, lemon zest, herbs & spices. Mix together by hand & roll into meatballs.

Step 3 of 7

Place meatballs on an oven tray lined with non stick baking paper.

Step 4 of 7

Bake 10-12 minutes until golden & cooked.

Step 5 of 7

Place Yarra Valley Cheese Marinated Feta, mayonnaise, buttermilk, garlic powder, onion powder & lemon juice & zest into a food processor.

Step 6 of 7

Process until combined & the dressing is smooth. Refrigerate until required.

Step 7 of 7

Serve the Chicken & Feta meatballs with the crisp salad & drizzle generously with the creamy marinated feta dressing.
