Cherry & Vanilla Brûlée

- 300grams ripe cherries, stoned and roughly chopped
- 12tablespoons caster sugar
- 50grams glace cherries, roughly chopped
- 4tablespoons kirsch
- 1 2/3 cup vanilla yoghurt
Method
Step 1 of 3
Mix the fresh cherries in a bowl with the half the sugar, and the chopped glace cherries and kirsch.
Step 2 of 3
Spoon the cherry mixture into 4 glass ramekins and top with the yogurt.
Step 3 of 3
Sprinkle the remaining caster sugar over the yogurt and use a blow-torch (or place the ramekins under a preheated hot grill for 2-3 minutes) to caramelize the tops. Serve immediately.
