- 4tablespoons madras curry paste
- 1 medium red onion, peeled and sliced
- 3 cloves garlic, peeled and minced
- 5centimeters ginger, peeled and minced
- 175grams quinoa
- 400grams cauliflower florets
- 350grams mixed vegetables, frozen
- 1 medium lime, juice
- 1 2/3 cup coconut milk, reduced fat
- 2 1/3 cup vegetable stock, made with 1 stock cube
- 3tablespoons coriander, fresh, chopped
Description
This one pot curry is the ultimate lazy evening meal, with plenty of veggies and quinoa to fill you up.
Method
Step 1 of 3
Heat a large, deep pan on medium heat and cook the onions, garlic, ginger and curry paste together for 5 minutes. In another pan, bring the stock to the boil and add the coconut milk.
Step 2 of 3
Add the cauliflower, mixed vegetables and quinoa to the curry mix and pour over the hot stock and coconut milk mix. Simmer for 10-12 minutes until the quinoa is cooked.
Step 3 of 3
Stir in lime juice, scatter coriander on top and serve.
