  • 2 red onions, peeled and finely sliced
  • 1tablespoons canola oil
  • 1 egg, yolk only

Quick caramelised onions add lots of flavour to these homemade bagels.

Method

Step 1 of 5

Pre-heat the oven to 180°C. Mix the flour, sugar, salt, yeast, raisins and cinnamon in a large bowl. Make a well in the centre and pour in 300ml of warm water. Mix to form a dough.

Step 2 of 5

Tip the dough on to a lightly floured work surface and knead for 6-7 minutes until stretchy and smooth. Place in an oiled bowl, cover with a damp tea towel and leave to rise for 1 hour, until doubled in size.

Heat the oil in a large pan on medium high heat and cook the onions for 12-15 minutes until soft and lightly caramelised.

Knock back the dough, add the caramelised onions and knead for 2-3 minutes to mix the onions in. Divide into 8 balls, make a hole in the centre of each with your finger and place on an oiled baking sheet. Cover with a damp towel and leave to rise for 30 minutes.

Step 5 of 5

Bring a large pan of water to the boil and drop each bagel in, cooking for 30 seconds on each side. Remove, drain well and place on a lined baking sheet. Brush the bagels with egg yolk and bake for 15-20 minutes until golden.
