- 2/3 cup frozen mixed berries
- 9 dried cannelloni pasta tubes
- 1 egg, beaten
- 2tablespoons caster sugar
- 2 cup vegetable oil
- 2 sheet shortcrust pastry
- 250grams mascarpone cheese

Method
Step 1 of 5
Thaw shortcrust pastry and cut each sheet into 9 squares. Lightly grease cannelloni pasta tubes. Place a tube across a square of the pastry and roll so that the points overlap. Dab corner with a little beaten egg to seal and press firmly. Repeat with remaining squares.

Heat 2 cups of vegetable oil in a medium saucepan. When hot, cook 3 tubes at a time until golden and crisp (about 30 seconds). Drain on paper towel. When cool enough to handle, twist tubes and gently remove.
Step 3 of 5
Place mixed berries into a small bowl and sprinkle with caster sugar. Leave to thaw.
Step 4 of 5
Empty mascarpone cheese into a small bowl and add sifted icing sugar and beat until thick. Mix thawed berry mixture into mascarpone.
Step 5 of 5
Pipe berry mixture into prepared cannoli shells, sprinkle with icing sugar and serve.
