  • 1kilograms braising beef, trimmed, chopped into chunks
  • 2tablespoons olive oil
  • 2 large onions, peeled and sliced
  • 1 1/2teaspoons caraway seeds, lightly crushed
  • 3tablespoons sweet paprika
  • 2 cups beef stock, reduced salt
  • 2 large carrots, peeled and chopped
  • 1 large green capsicum, chopped
  • 200grams potatoes, peeled and chopped
  • 400grams chopped tomatoes, canned

Description

This meaty, spiced soup makes for a filling lunch or dinner. the flavour intensifies overnight so make a big batch to reheat for leftovers.

Method

Step 1 of 4

Heat the oil in a large pan on medium high heat, add the beef and cook for 4-5 minutes, sealing on each side. Stir in the onions and caraway seeds and cook for 3-4 minutes to soften the onions.

Step 2 of 4

Add the paprika to the pan and stir well to coat everything. Pour over the beef stock, bring to the boil, reduce the heat and simmer for 1 hour until the beef is just tender.

Step 3 of 4

Add the carrots, capsicum and potatoes, pour in the chopped tomatoes and simmer for 30 more minutes until the carrots and potatoes are soft.

Step 4 of 4

Serve in bowls with a spoonful of sour cream, if desired.
