- 4 salmon fillets
- 200grams green beans
- 260grams truss tomatoes
- 1tablespoons olive oil
- dill and lemon wedges, to serve
- 2tablespoons almond and olive pesto
Description
Learn how to cook salmon with this zesty recipe, featuring homemade almond and olive pesto. It's great for weeknights when you want something flavourful but you're pinched for time.
Method
Step 1 of 3
Preheat oven to 200°C. Line a baking tray with baking paper. Place 4 x 150g salmon fillets on tray and spread each with 2 tbs almond and olive pesto.
Step 2 of 3
Toss 200g green beans and 260g sweet berry truss tomatoes with 1 tbs olive oil. Add to tray with salmon and season to taste.
Step 3 of 3
Bake for 12-15 minutes or until just cooked through. Garnish with dill and serve with lemon wedges.
