- 4 salmon fillets, 180g each, scaled and boned
- 1 medium lemon, halved and pips removed
- 150grams breadcrumbs
- 50grams butter
- 10grams parmesan, grated
- 10grams macadamia nuts, crushed
- 1 pinch salt
- 1 pinch pepper

The cheesy and nutty crumb enhances the salmon flavours.
Method
Step 1 of 3
Pre-heat the oven to 180°C. Melt the butter on a pan for 2 minutes and add the breadcrumbs and combine fully and then set to one side.
Step 2 of 3
Now add the grated parmesan and crushed nuts to the same container. Place the salmon skin side down on a baking tray and cover with the mixture evenly.
Step 3 of 3
Bake in the oven 20 minutes and then remove from the heat. Season with salt and pepper before serving with a wedge of lemon and a choice of sides.
