  • 4 frozen basa fillets, thawed
  • 3/4 cup chilli, soy & garlic dressing
  • 1 lemon, cut into 8 slices
  • 1 broccoli head, cut into small florets
  • 450grams pkt microwave basmati rice

Description

Serve up tender, juicy basa fish parcels with fragrant broccoli basmati rice in 20 minutes. It’s a recipe you can cook to impress (without any stress!), or have as an easy midweek dinner.

Method

Step 1 of 4

Preheat oven to 220°C/200°C fan-forced. Grease and line a baking tray with baking paper. Tear 4 x 20cm pieces of baking paper and foil. Place a piece of baking paper on a piece of foil.

Step 2 of 4

Top baking paper with fish, then drizzle each with 11/2 tbs of the chilli dressing. Top with lemon. Fold paper (and foil) to enclose fish and form a parcel. Place on prepared tray. Bake for 10 minutes or until the fish is cooked. Remove from the oven.

Meanwhile, spray broccoli with oil. Heat a large non-stick frying pan over medium-high heat. Add broccoli and remaining chilli dressing. Cook, stirring, for 2 minutes. Add rice and cook, stirring, for 4 minutes or until heated.

Serve fish and lemon with broccoli rice.
