  • 1 cup frozen peas
  • 5 spring onions, finely sliced
  • 1/2 cup self-raising flour
  • 250grams middle bacon, rind removed, finely shredded
  • 4packets instant chicken noodles (85g each)
  • 4 cups baby leaf salad mix (to serve)
  • 5 eggs
  • 1 cup tasty cheese, shredded

Method

Step 1 of 3

Preheat oven to 180°C. Grease an 8-cup capacity baking dish. Cook noodles as per packet instructions. Drain well.

Step 2 of 3

Heat a frying pan over medium heat. Add bacon and cook for 5 minutes or until golden. Set aside to cool.

Step 3 of 3

Whisk eggs and milk together in a large bowl. Add noodles, bacon, onion, peas, flour and cheese to egg mixture. Stir until combined. Transfer to prepared baking dish. Bake for 35 minutes or until cooked through and golden. Serve with a mixed salad.
