These are best served fresh from the fryer. If you want to eat the two batches together, pop the first batch back into the air fryer to reheat briefly for a couple of minutes before serving the pickle chips altogether.

Method

Step 1 of 4

Preheat an air fryer to 180°C.

Step 2 of 4

Meanwhile, place pickles in a single layer on a long double sheet of paper towel. Top with a second layer of doubled-up paper towel. Pat down lightly to absorb excess moisture.

Step 3 of 4

Spread breadcrumbs over a dinner plate. Beat egg in a small bowl. Working with a few pickles at time, dip in egg and turn to coat. Place pickles on one side of the breadcrumbs on the plate. Press down on each pickle to press into the breadcrumbs. Sprinkle the breadcrumbs from the other side of the plate generously onto the pickles, pressing down to coat. Transfer to a baking tray.

Step 4 of 4

Spray half of the pickles with oil. Carefully add to air-fryer basket. Cook for 8 minutes or until golden. Repeat with remaining pickles. Serve with mayonnaise for dipping.
