  • 1 bunch broccolini, steamed (to serve)
  • 1 cup instant polenta
  • 1/2 cup parmesan, finely grated
  • 440grams slow cooked lamb shanks
  • 2tablespoons olive oil (to drizzle)
  • 130grams berry truss tomatoes

Method

Step 1 of 5

Preheat oven to 200°C.

Step 2 of 5

Remove lamb shanks and sauce from packet and place into an ovenproof dish. Cover with foil and heat for 30 minutes.

Step 3 of 5

Place tomatoes onto a baking tray. Drizzle with a little oil, then season with salt and pepper. Place into oven alongside the shanks and continue to cook both for a further 15 minutes.

Meanwhile, bring 3 cups water to the boil in a medium pan. Slowly add polenta in a steady stream, stirring constantly. Cook for 5 minutes or until polenta thickens. Remove from heat and stir in butter and parmesan. Season with salt and pepper.

Step 5 of 5

Spoon polenta mash onto plates, top with lamb shanks and spoon over sauce. Serve with roast tomatoes and broccolini.
