  • 200grams pre-made pesto
  • 4 mini capsicums
  • 1tablespoons balsamic vinegar
  • 1/4 cup olive oil
  • 1 clove garlic, crushed
  • 1tablespoons brown sugar
  • 12 solanato tomatoes, halved
  • 2kilograms Turkey thigh roast

Method

Step 1 of 4

Preheat oven to 170°C. Remove film from the tray. Spray Gold Turducken with olive oil. Cover with foil and bake for 1 hour.

Step 2 of 4

Remove foil and cook for a further 30 minutes. Rest for 10-15 minutes before slicing. Serve with stuffed mini capsicums. Stuffed Mini Capsicum: 1. Preheat oven to 200°C. Cut each capsicum in half, leaving the stem intact. Lay on a baking tray in a single layer. Fill each capsicum half with 1 tsp pesto and half a tomato.

Combine oil, balsamic and garlic in a jug. Drizzle over capsicums. Sprinkle with sugar, and season with salt and pepper.

Bake for 20 minutes until soft and golden.
