  • 2 bay leaves

Method

Step 1 of 6

Place beef in a deep pan. Press cloves into onion. Add onion to pan with celery and carrots.

Step 2 of 6

Wrap parsley, peppercorns and bay leaves in muslin and tie with string. Add to pan with vinegar and sugar and cover with water.

Step 3 of 6

Bring to the boil over medium heat. Skim any scum that rises to surface. Reduce heat, cover and simmer for 1 hour per kilo.

Step 4 of 6

Cut cabbage and potatoes into wedges. Add to pan and cook for about 10 minutes until tender.

Step 5 of 6

In a pan, melt butter. Add flour and stir until smooth. Cook for 1 minute. Stir in 1 cup of the cooking liquid until smooth. Bring to the boil. Cook until thickened. Stir in parsley and horseradish or mustard.

Step 6 of 6

Remove beef and slice. Serve with vegetables and sauce.
