  • 2 cloves garlic, crushed
  • 16 green king prawns
  • 2 small red chillies, seeded and chopped
  • 2 green shallots, finely chopped
  • 1 handful kaffir lime leaves, finely shredded
  • 1tablespoons fish sauce
  • 1 lime, juiced and rind finely grated
  • 1 lime, cut into wedges (to serve)
  • 1 stalk lemongrass
  • 1teaspoons brown sugar
  • 1tablespoons vegetable oil

Method

Step 1 of 3

Peel prawns, leaving tail intact and devein. Remove tough outer layer from the lemongrass and finely slice the tender part. Place into a small food processor.

Step 2 of 3

Add shallots, garlic, chilli, kaffir lime leaves and lime rind and process to a finely chopped paste. Add brown sugar, fish sauce and lime juice and process until combined. Pour into a shallow ceramic dish, add prawns, and turn to coat. Refrigerate for 30 minutes.

Step 3 of 3

Heat a flat barbecue plate on medium heat. Add oil and prawns and cook in batches for about 1 minute each side, until they have changed colour. Serve on a platter with lime wedges. Note: To devein a prawn, use a small sharp knife to make a slit along the middle of the back to expose the dark vein, use your fingers to carefully pull the vein through the opening at the head end to remove.
