  • 2 free range eggs
  • 1/4 cup caster sugar

Method

Step 1 of 2

Whisk eggs, sugar and vanilla together in a medium bowl until foamy. Add flour and a pinch of salt and stir until just combined. Fold in ricotta.

Step 2 of 2

Heat oil in a saucepan over medium heat. Using 2 dessertspoons, drop heaped spoonfuls of mixture into hot oil, a few at a time. Cook for 2-3 minutes, turning frequently, or until golden. Remove using a slotted spoon and drain on paper towel-lined plate. Dust with icing sugar and serve immediately.
