  • 1tablespoons brown sugar
  • 4 medium egg whites, egg whites only
  • 1/2teaspoons cornflour

  • 1teaspoons lemon juice

Description

A festive mix of berries wrapped in cream and crunchy meringue.

Method

Step 1 of 6

Pre-heat the oven to 180°C/160°C fan-forced. In a mixing bowl, combine the cherries, ricotta, cream, chocolate and brown sugar until fully combined.

Step 2 of 6

Allow the mix to set in the fridge while you make the meringue. In a mixing bowl, beat the egg whites to form peaks.

Step 3 of 6

While mixing, introduce the cornflour, caster sugar and lemon juice and combine fully until peaks form again.

Step 4 of 6

In a deep baking tray, line with some foil and pour your meringue mix to bake for 20 minutes.

Step 5 of 6

Remove and allow to cool slightly before spreading the filling from the fridge evenly over the top.

Step 6 of 6

Now roll the meringue around the filling to create the roulade and allow to set in the fridge for 1 hour before serving.
