Method
Step 1 of 3
Preheat oven to 200°C/180°C fan-forced. Place mushrooms in a medium roasting pan. Remove leaves from half of the thyme, then add to pan with oil, garlic, shallot and dried herbs, then toss to combine. Bake for 15 minutes, stirring halfway through cooking, or until just tender.

Meanwhile, combine vinegar and honey in a small bowl.
Step 3 of 3
Drizzle vinegar mixture over mushroom mixture, then toss to combine. Season and serve warm topped with remaining thyme sprigs.
