- 2 zucchini
- 1 lemon, zested, juiced
- 425grams tuna in oil, flaked, oil reserved
- 1 bunch asparagus, halved crossways and lengthways
- 2/3 cup finely grated parmesan
- 2tablespoons red wine vinegar
- 200grams Woolworths leafy salad mix
- 1tablespoons wholegrain mustard
- 2tablespoons extra virgin olive oil

Description
Serve up dinner fast with this budget-friendly tuna primavera recipe. The tasty flavour combination of fettuccine pasta, canned tuna, asparagus, grated zucchini and parmesan won't disappoint.
Method
Step 1 of 4
Cook pasta in a large saucepan of boiling water according to packet instructions. Drain, reserving one-third cup cooking liquid.
Step 2 of 4
Meanwhile, grate zucchini, then place in a sieve and press to remove any excess liquid. Heat reserved oil in a large, deep frying pan over medium-high heat.
Step 3 of 4
Add lemon zest and asparagus and cook for 3 minutes, or until asparagus is bright green and tender. Add tuna and zucchini and cook, stirring occasionally, for 2 minutes
or until well combined and heated. To tuna mixture in pan, add pasta, lemon juice, reserved cooking liquid and half of the parmesan. Cook, tossing occasionally, for 2 minutes or until heated through. Divide among bowls.
Step 4 of 4
Combine oil, vinegar and mustard in a small bowl to make salad dressing. Place salad
in a bowl, add dressing and toss to combine. Sprinkle pasta with remaining parmesan. Serve pasta
with salad.
