This trout with nutty and herby crust is a flavour packed, light and healthy dinner option.

Method

Step 1 of 3

Pre-heat the oven to 160°C.

Step 2 of 3

Mix the breadcrumbs, ground almonds, herbs, lemon zest and cracked black pepper in a small bowl.

Step 3 of 3

Place each trout fillet on an oiled baking tray skin side down and top with the crumb mix. Bake for 12-15 minutes until crisp. Serve with salad and baby potatoes, if desired.
