- 500grams strawberries
- 1 vanilla bean, split
- 2L chilled natural mineral or soda water

Method
Step 1 of 3
Quarter 6 strawberries and place a piece into each hole of 2 x 12-hole ice-cube trays. Fill with water and freeze for 4-5 hours or until solid.
Step 2 of 3
Meanwhile, hull and chop remaining strawberries and place in a saucepan with sugar, vanilla bean and 1 cup water. Bring to the boil, then reduce heat to low and simmer for 20 minutes or until mixture is syrupy. Strain through a fine sieve, pressing on pulp to extract syrup. Refrigerate syrup until cold.
Step 3 of 3
Place 3 strawberry ice cubes in each glass, add 2 tbs strawberry syrup and top up with mineral or soda water. Serve immediately.
