- 50grams peppermint
- 300grams granulated sugar
- 3-4 drops natural green food colouring
- 3-4 drops natural peppermint extract
- 300milliliter water, boiling
Description
This cordial has a delicate menthol flavour. If you like a stronger taste – and have a rampant crop of mint – double the weight of leaves (but keep the other ingredients the same). Serve with sparkling or still water, or mixed with vodka and crushed ice.
Method
Step 1 of 4
Put the leaves in a large bowl, add the sugar, and pound with the end of a rolling pin or a pestle to bruise and crush them to a paste.

Pour over 300ml of boiling water, stir, cover, and leave to infuse for at least 2 hours or until the mixture is completely cold.

Strain through a sieve into a saucepan, pressing and squeezing the mint to extract the maximum flavour. Heat the pan over a moderate heat, stirring until the sugar has dissolved. Then bring to the boil and boil for 2 minutes. Stir in a few drops of natural green food coloring and peppermint extract, if using.

Pour immediately into a warm sterilized bottle using a sterilized funnel, seal, label, and leave to cool, then store in the fridge. Shake before use.
