Cabbage Slaw
  • 1/2 small red cabbage
  • 1 carrot, shredded
  • 2tablespoons extra virgin olive oil
  • 2tablespoons honey
  • 1/3 cup organic apple cider vinegar
  • 1 red apple, cut into matchsticks
  • 1 garlic clove, minced
  • 2tablespoons paprika
  • soft white rolls (to serve)
  • 1 cup barbecue sauce
  • 2tablespoons garlic powder
  • 2 star anise
  • 2tablespoons onion powder
  • 1teaspoons cracked black pepper
  • 2kilograms pork ribs
  • 2teaspoons sea salt flakes
  • 1/3 cup firmly packed brown sugar
  • 1/4 cup mild American mustard
  • 3 cup cola

Description

Glazed in smoky sweet barbecue flavours, these sticky pork ribs are what dreams are made of. Enjoy with a crunchy fresh slaw.

Method

Step 1 of 5

Soak 2 cups smoking woodchips in water overnight. Using a sharp knife, remove silver membrane from ribs. Place ribs in a deep roasting pan and spread all over with mustard. Place paprika, powders, pepper, sugar and salt flakes in a bowl, mixing to combine. Rub spice mix all over ribs, then refrigerate overnight.
Instruction tip

The membrane you need to remove is on the bony side of the ribs. Use a paper towel if you need help to grip while removing the membrane.

Add cola and star anise to roasting pan with ribs. Wrap pan tightly with foil, place on a barbecue and cook for 21/2 hours or until ribs are tender. Remove pan from heat and stand for 10 minutes to cool slightly. Transfer ribs to a plate, discarding cooking liquid in pan, then brush ribs with half the barbecue sauce.

To smoke and glaze ribs, preheat barbecue to 150°C. Drain pre-soaked smoking woodchips and divide in half, then wrap each half in a double layer of foil. Using a skewer, create multiple holes across the surface of the foil to help release the smoke.

Increase barbecue to 220°C. Place a double layer of foil on the grill plate of the barbecue for ribs to be placed on, then place wrapped woodchips onto grill plate on either side of foil tray so smoke begins to form. Place ribs on foil tray, close barbecue lid and cook for 30 minutes or until glazed and sticky. Brush with remaining sauce.

Meanwhile, to make the slaw combine all the ingredients in a bowl. Serve ribs with slaw and rolls.
