- 2 large chicken fillets
- 4 carrots
- 5 medium potatoes
- 1 medium/large head of broccoli
- 1 medium zucchini
- 1teaspoons black pepper
- 1L massel low fodmap chicken style stock
- 1 cup frozen baby green beans
- 2 cups japanese pumpkin
Description
A great winter warmer of a simple homestyle chicken and vegetable soup that can be enjoyed by anyone!
Method
Step 1 of 6
Gather all your ingredients accept for the frozen green beans.
Step 2 of 6
Peel carrots and potatoes. Dice potatoes to a small size and slice carrots to appx 1cm thick.
Chop broccoli head into florets.
Slice zucchini down the middle lengthwise and slice to appx 1 cm thick.
* ** Remember to discard chunky broccoli stalks and vegetable peelings for compost or green waste.
Step 3 of 6
Put all vegetable ingredients into slow cooker including LOW FODMAP stock.
Add pepper and give a good stir to mix vegetables.
Step 4 of 6
Put in Chicken fillets and slice in halves. Mix it all about.
Step 5 of 6
Cook on low for 5.5 hours.
Stirring a couple of times along the way.
Step 6 of 6
Carefully take the chicken out, shred it, then put it back in the slow cooker along with the frozen green baby beans.
Cook for another half hour on low.
