- 2tablespoons vegetable oil
- 1tablespoons Thai fish sauce
- 1 handful basil leaves
- 2tablespoons Thai green curry paste
- 3 cloves garlic, crushed
- 5centimeters fresh root ginger, grated
- 2 red chillies, deseeded and shredded
- 400grams coconut milk
- 200grams bamboo shoots, drained
- 2tablespoons pea aubergines
- 75grams baby corn, halved lengthways
- 400grams salmon fillets, pinboned, skinned, cut into chunks
Description
Hot, fresh flavours give new life to salmon.
Method
Step 1 of 3
In a large frying pan, heat the oil, add the curry paste, and stir. Throw in the garlic, ginger, and chillies. Keep stirring for 2-3 minutes.
Step 2 of 3
Now pour in the coconut milk. Bring to a boil, then add the fish sauce, bamboo shoots, pea aubergines (if using), and baby corn. Reduce the heat slightly, and simmer for 5 minutes.
Step 3 of 3
Add the salmon and basil, and simmer for another 5-10 minutes until the fish is cooked. Season and serve with sticky Thai jasmine rice.
