  • 2 red capsicums, halved and deseeded
  • 2 yellow capsicums, halved and deseeded
  • 1 small red onion, cut into 8 wedges
  • 2 runner beans, trimmed and cut into small batons
  • 1 zucchini, halved and sliced
  • 3 cloves garlic, sliced
  • 2tablespoons extra virgin olive oil
  • 1teaspoons cumin seeds
  • 1 pinch salt
  • 100grams feta or goats' cheese (to serve)
  • 1 pinch pepper

Method

Step 1 of 3

Place the pepper halves in a roasting tin and divide the other vegetables and the garlic between them.

Step 2 of 3

Sprinkle with the oil and cumin seeds, season with salt and pepper and bake in a preheated oven, 200°C for 25 minutes.

Step 3 of 3

Crumble over some feta or goats cheese to serve.
