- 2 red capsicums, halved and deseeded
- 2 yellow capsicums, halved and deseeded
- 1 small red onion, cut into 8 wedges
- 2 runner beans, trimmed and cut into small batons
- 1 zucchini, halved and sliced
- 3 cloves garlic, sliced
- 2tablespoons extra virgin olive oil
- 1teaspoons cumin seeds
- 1 pinch salt
- 100grams feta or goats' cheese (to serve)
- 1 pinch pepper
Method
Step 1 of 3
Place the pepper halves in a roasting tin and divide the other vegetables and the garlic between them.
Step 2 of 3
Sprinkle with the oil and cumin seeds, season with salt and pepper and bake in a preheated oven, 200°C for 25 minutes.
Step 3 of 3
Crumble over some feta or goats cheese to serve.
