  • 1tablespoons curry powder
  • 3 clove garlic, crushed
  • 1 long red chilli, thinly sliced
  • 2 cup salt-reduced vegetable stock
  • 800grams canned no-added-salt diced tomatoes
  • 800grams canned no-added-salt lentils, rinsed, drained
  • 120grams baby spinach leaves
  • 1 lemon, juiced
  • 1/2 bunch coriander, leaves picked, finely chopped
  • 2 wholemeal Lebanese bread rounds, halved (to serve)

Description

Warm up with this hearty lentil and spinach stew that's ready in less than 30 minutes. This one-pan recipe is the perfect weeknight dinner.

Method

Step 1 of 2

Heat oil in a large, deep frying pan over medium-high heat. Cook bolognese mix, stirring, for 5 minutes or until vegetables start to soften. Add curry powder, garlic and half the chilli, then cook, stirring, for 1 minute or until fragrant.

Step 2 of 2

Add stock, tomatoes and lentils, then bring to the boil. Reduce heat to medium-low and simmer, uncovered, for 8 minutes or until vegetables are tender. Stir in spinach and lemon juice, then cook for 1 minute or until spinach has wilted. Season. Sprinkle with coriander and remaining chilli, then serve with bread.
