  • 2tablespoons caster sugar
  • 1tablespoons sea salt flakes
  • 2teaspoons fennel seeds
  • 1teaspoons black peppercorns
  • 2 small red onions, thinly sliced

Description

Follow this easy recipe for the ultimate Christmas condiment. Pickled red onions go perfectly with rich meat like ham and pork, or tossed into potato salad.

Method

Step 1 of 2

Place vinegar, sugar, salt flakes, fennel seeds and peppercorns in a saucepan and bring to the boil over high heat. Allow to cool.

Step 2 of 2

Place onion in a bowl and pour over vinegar mixture. Set aside for 15 minutes to lightly pickle. Store in a sterilised glass jar or an airtight container in the fridge for up to a month.
