- 1/3 cup raw sugar
- 2 sheets frozen puff pastry, thawed
- 1/2 cup icing sugar, sifted
- 1 passionfruit

Method
Step 1 of 5
Preheat oven to 180°C. Lay a large piece of baking paper on a work surface.
Step 2 of 5
Place pastry on paper, overlapping 2 edges by 1cm. Press well to join.

Scatter evenly with sugar. Using a rolling pin, gently push sugar into pastry surface. Starting at one short end, tightly roll pastry to the join at the centre. Repeat from the other side to meet in the middle. Chill for 15 minutes or until firm.

Line a baking tray with baking paper. Cut pastry into 18 slices about 1.25cm-thick. Place slices, cut sides up, on tray. Bake for 25 minutes or until golden brown.

Meanwhile, combine passionfruit and icing sugar in a bowl. Allow palmiers to cool then spread with passionfruit icing to serve.
