  • 1 cup green beans, chopped
  • 2 carrots, peeled, diced
  • 1 brown onion, diced
  • 800grams can cannellini beans, drained, rinsed
  • 500milliliter beef stock
  • 1tablespoons olive oil
  • 190grams basil pesto
  • 4 piece osso buco

Method

Step 1 of 4

Pat osso buco dry with paper towel, brush with oil and sprinkle with salt and pepper. Brown beef on both sides in a large ovenproof casserole dish over medium-high heat.

Step 2 of 4

Add stock, onion, carrot, and bouquet garni, bring to the boil and reduce heat to a simmer. Cover and cook for 1 1/4 hrs or until beef is tender.

Step 3 of 4

Add the green beans and cannellini beans for the last 15 minutes of cooking.

Step 4 of 4

Divide vegetables and sauce between 4 bowls and top each with a piece of osso buco and a dollop of pesto.
