  • 1 lemon, rind finely grated and juiced
  • 2 1/2tablespoons olive oil
  • 3 garlic cloves, crushed
  • 1 cup couscous
  • 1/4 cup pistachios
  • 4 chicken drumsticks (bone in)

Description

Be transported to Morocco with this delicious chicken tagine dish bursting with bold flavours from cumin, garlic, coriander and dates.

Method

Step 1 of 2

Heat 2 tbs of the oil in a frying pan over high heat. Season chicken pieces and cook for 5 minutes, turning, until golden. Meanwhile, combine stock, tomatoes, garlic, spices, onion, carrot, dates, rind, juice and coriander in the slow cooker. Add chicken. Cover with lid. Cook on low setting for 6 hours (or high setting for 3 hours).

When ready to serve, place couscous in a heatproof bowl. Add 1 cup boiling water and remaining oil. Stir well. Cover and set aside for 5 minutes or until absorbed. Fluff with a fork. Spoon couscous onto plates and top with chicken and vegetables. Garnish with pistachios and coriander sprigs.
