- 3/4 cup vegetable stock

- 2teaspoons light soy sauce
- 3tablespoons parsley, fresh, chopped

Description
Meaty mushrooms replace beef in this delicious vegetarian stroganoff stew.
Method
Step 1 of 2
Heat the oil in a large pan on medium heat. Cook the onion for 5 minutes, add the mushrooms and cook for 6-8 minutes until they release their juice and it evaporates. Stir in the garlic, soy sauce and paprika and cook for 1 minute.
Step 2 of 2
Pour over the vegetable stock and simmer for 5 minutes until thickened. Remove from the heat and stir through the creme fraiche and parsley before serving.
