- 1 large onion
- 5centimeters ginger, peeled and grated
- 900grams carrots, peeled and sliced
- 4tablespoons miso paste
- 1 ltr vegetable stock, hot
- 1/2 lime, juiced

Description
Give classic carrot and ginger soup an upgrade with rich and savoury miso.
Method
Step 1 of 3
Heat the butter and oil in a large pan on medium high heat and cook the onion for 6-7 minutes. Add the ginger and carrots and cook for 2 minutes.
Step 2 of 3
Whisk the miso paste into the vegetable stock and pour over the carrots. Bring to the boil, reduce the heat and simmer for 25 minutes, until the carrots are tender. Stir in the lime juice.
Step 3 of 3
Remove from the heat, blitz until smooth with a hand blender and serve.
