  • 1 bunch broccolini, cut into thirds crossways
  • 1/4 small red cabbage, finely shredded
  • 1/2 cup edamame, blanched
  • 1/4 bunch spring onion, sliced

Description

This speedy Japanese miso and maple salmon dish is a feast for the eyes and certainly delivers on flavour.

Method

Step 1 of 4

Preheat oven to 220°C/200°C fan-forced. Line a baking tray with baking paper. Place salmon on tray, skin-side down. Bake for 12 minutes. Empty sachet of sauce over salmon and bake for a further 2 minutes or until cooked.

Step 2 of 4

Cook rice according to packet instructions.

Step 3 of 4

Place broccolini in a bowl and cover with boiling water. Stand for 5 minutes or until bright green and tender. Drain.

Step 4 of 4

Divide rice between bowls. Top with broccolini, cabbage, edamame and salmon. Sprinkle with onion. Serve.
