  • 1 lime
  • 250grams green beans, halved
  • 2 cloves garlic, finely chopped
  • 1 stalk lemongrass, finely chopped
  • 1 small red chillies, thinly sliced
  • 450grams Macro tofu
  • 3teaspoons fish sauce
  • 2teaspoons brown sugar
  • 200grams bean sprouts
  • 1/4 cup unsalted peanuts, chopped
  • 450grams Woolworths microwave brown rice
  • 1/4 bunch coriander, sprigs picked
  • 1tablespoons extra virgin olive oil

Description

Go meat-free tonight with this satisfying Thai-style larb tofu. It's on the table in 15 minutes and delivers a punch of flavour in every bite.

Method

Step 1 of 4

Juice 1 lime half. Cut remaining half into wedges.

Step 2 of 4

Heat half of the oil in a large frying pan over medium-high heat. Add beans and stir-fry for 2 minutes or until just until tender. Transfer to a plate. Heat remaining oil. Add garlic, lemongrass and half of the chilli. Cook for 1 minute or until fragrant.

Step 3 of 4

Crumble tofu into pan. Stir-fry for 3-4 minutes, breaking up any large lumps, or until heated through. Stir in fish sauce and sugar.

Step 4 of 4

Remove from heat. Add beans, lime juice and half of the sprouts. Toss through until well combined. Remove from heat. Prepare rice according to packet instructions. Top tofu mixture with remaining sprouts, peanuts, remaining chilli and coriander. Serve with lime and rice.
