  • 4 shallot, finely sliced
  • 500grams mushrooms, sliced
  • 400grams penne pasta
  • 1/4 cup parmesan cheese, grated
  • 100grams premium shaved leg ham 97% fat free
  • 185milliliter evaporated milk light & creamy

Method

Step 1 of 5

Cook penne in a large pan of rapidly boiling, salted water until just tender. Drain and return to pan.

Spray a non-stick frying pan with olive oil cooking spray. Heat over medium heat. Add mushrooms and cook for 8-10 minutes, stirring often, until golden and all liquid has evaporated. Add shallots and cook for 1 minute, stirring until well combined.

Step 3 of 5

Sprinkle cornflour over mixture. Slowly add milk, stirring constantly. Bring to the boil.

Step 4 of 5

Reduce heat and simmer for 1 minute. Stir through ham.

Step 5 of 5

Pour sauce over pasta. Toss until well combined. Serve sprinkled with parmesan.
