Method
Step 1 of 2
Preheat the oven to 180°C (Gas 4). Line the base and sides of the tin with baking parchment. In a bowl, beat the butter and sugar together with an electric hand whisk until pale and creamy, then beat in the eggs, one at a time, adding a little of the flour after each one. Stir in the rest of the flour and the milk - the mixture should drop easily off the beaters. Add the dried fruit and mix until well combined.

Spoon the mixture into the tin, level the top, and bake for 1 1/2 -1 3/4 hours, or until firm to the touch and a skewer inserted into the middle of the cake comes out clean. Leave in the tin to cool completely.
