  • 60grams sheets Puff Pastry
  • 1/4 cup pitted Kalamata olives, halved
  • 1/2 cup couscous
  • 1 cup shredded leftover baked lamb

Description

Try our lamb couscous salad, a delicious, easy-to-make dish that is perfect for any occasion. Discover a array of flavour with this ideal meal for any day.

Method

Step 1 of 4

Place couscous into a large bowl with 2 tsp oil and a pinch of salt. Add 1/2 cup boiling water and stir well to combine. Set aside for 10 minutes then fluff with a fork.

Step 2 of 4

Meanwhile, whisk 2 tsp lemon juice with 1 tbs oil and season with salt and pepper. Stir in yoghurt and chopped mint. Set aside.

Step 3 of 4

Add zest, capsicum, rocket, olives and onion to couscous with remaining lemon juice and oil and toss well.

Step 4 of 4

Top couscous salad with pomegranate and extra mint. Serve with lamb and yoghurt dressing.
