  • 1.20kilograms brocoli, florets
  • 1 red onion, finely sliced
  • 1/4 cup lemon, juice
  • 4 rasher shoulder bacon, finely sliced
  • 2teaspoons dijon mustard
  • 1/3 cup olive oil
  • 80grams pine nuts

Method

Step 1 of 3

Toast pine nuts in a frying pan over medium heat for 2-3 minutes, stirring, until golden. Transfer to a bowl.

Step 2 of 3

Add 4 finely sliced rashers of bacon and cook for 3 minutes until crisp. Add to pine nuts with 1 finely sliced red onion and stir to combine.

Step 3 of 3

Whisk olive oil, cup lemon juice and Dijon mustard in a bowl. Set aside. Steam broccoli florets for 3-4 minutes, or until just tender. Drain well. Toss into pine nut mixture with dressing. Serve.
