  • 1tablespoons olive oil
  • 1teaspoons garam masala
  • 5 spring onions, chopped
  • 1 medium green chilli, finely sliced
  • 300grams brussels sprouts, trimmed, shredded
  • 300grams kale, destalked, chopped
  • 1/2 medium lemon, juice and zest
  • 8 medium eggs

Description

This super green baked eggs dish is a delicious way to get veggies into your breakfast.
Instruction tip
Top with extra lemon zest and fresh coriander, if you like.

Method

Step 1 of 2

Heat the oil in a large, deep non-stick frying pan on medium heat and cook the spring onions, shredded sprouts and kale for 5-6 minutes to soften. Add the chilli and garam masala and cook for 1 minute. Stir in the lemon juice and a pinch of zest.

Step 2 of 2

Create 8 gaps in the pan and crack in the eggs. Cook for 5-7 minutes until just set and serve,.
