  • 500grams chicken breast stir fry strips
  • 2tablespoons vegetable oil
  • 2tablespoons fish sauce
  • 1tablespoons coriander sprigs (to serve)
  • 2centimeters ginger, peeled, grated
  • 1 red onion, thinly sliced
  • 1 large lime, juiced
  • 4 cup chicken stock
  • 200grams fettuccine fresh pasta
  • 270milliliter coconut milk
  • 3 garlic cloves, crushed
  • 200grams chilli jam

Method

Step 1 of 4

Heat a wok over a high heat. Add oil and swirl around wok to coat.

Step 2 of 4

Add chicken and stir-fry for 3 minutes or until golden. Transfer to a plate. Reheat wok, adding extra oil if required, and stir-fry remaining portions of chicken.

Step 3 of 4

Add onion, garlic and ginger to wok and stir-fry for 2 minutes or until soft. Pour chicken stock, 2 cups of water, coconut milk, chilli jam relish, lime juice and fish sauce into the wok. Stir until combined and bring to the boil.

Step 4 of 4

Add fettuccine and cook for 8-10 minutes or until tender. Return chicken to wok, stir and cook for 2 minutes or until heated through. Transfer soup to bowls. Top with coriander sprigs and chilli.
