- 2 cloves garlic, crushed
- 2 carrots, trimmed, peeled and diced
- 1 brown onion, finely chopped
- 2tablespoons continental parsley (to garnish)
- 4 cup chicken stock
- 1tablespoons olive oil
- 2 stick celery, thinly sliced
- 440grams singapore-style fresh noodles
- 400grams leftover roast chicken meat, chopped

Method
Step 1 of 3
Heat oil in a large deep saucepan over medium heat. Add onion, carrot, celery and garlic and cook for 8 minutes or until tender. Add stock and 3 cups of water. Stir until well combined and mixture comes to the boil.

Add chicken and noodles. Cook for 2 minutes or until heated through.
Step 3 of 3
Ladle into bowls, top with parsley and serve immediately.
