Description
This simple lasagna is bursting with basil flavour and lots of green vegetables.
Method
Step 1 of 3
Pre-heat the oven to 180°C. Heat the pesto, 250ml of water and half of the mascarpone in a large pan, whisking until smooth and bubbling. Add the spring onions, spinach, peas and zucchini and cook for 3 minutes.
Step 2 of 3
Whisk the rest of the mascarpone with the milk to get a sauce consistency.
Step 3 of 3
Spoon a quarter of the pesto mix into the base of a baking dish, top with a layer of lasagna sheets. Repeat, finishing with a layer of lasagna sheets. Pour over the mascarpone sauce and sprinkle with parmesan. Bake for 35 minutes until golden. Serve topped with scattered basil leaves.
