  • 2tablespoons olive oil
  • 1 large butternut squash, peeled and sliced into half moons
  • 2 large onions, peeled and diced
  • 250grams spinach, chopped
  • 3 cloves garlic, peeled and grated
  • 25grams butter
  • 25grams plain flour
  • 1 1/4 cup milk
  • 100grams cheddar, grated
  • 10 sheets lasagne, dried
  • 1 pinch nutmeg
  • 1/2 bunch sage, about 6 leaves

Description

This butternut squash and sage lasagne is a packed with autumnal flavours and makes an impressive main vegetarian dish.

Method

Step 1 of 4

Pre-heat the oven to 180°C. Place the butternut squash on a large baking tray, drizzle with oil and bake for 15 minutes to soften.

Step 2 of 4

Heat the rest of the oil in a large pan and cook the onions for 5 minutes. Add the garlic and spinach and cook for 2-3 minutes.

Melt the butter in a saucepan, whisk in the flour and cook for 1 minute. Whisk in the milk and cook, stirring until thickened. Add the grated cheese and cook for 1 minute to melt. Whisk in a pinch of nutmeg.

Step 4 of 4

Spoon a quarter of the white sauce into the base of a baking dish, top with a layer of butternut squash, then spinach mix and a layer of lasagne sheets. Repeat, finishing with a layer of white sauce. Top with sage leaves and bake for 35 minutes until golden.
