  • 1 large onion, peeled and diced
  • 3 cloves garlic, peeled and minced
  • 1/2teaspoons turmeric
  • 2teaspoons smoked paprika
  • 300grams bomba paella rice
  • 2L vegetable stock
  • 1 large zucchini, peeled into ribbons
  • 250grams asparagus, trimmed and chopped
  • 125grams tenderstem broccoli, chopped
  • 200grams peas, frozen
  • 100grams spinach, chopped
  • 2 medium lemon, juice and zest of 1, 1 sliced into wedges
  • 1/2 bunch parsley, leaves chopped
  • 1 pinch cracked black pepper

Description

This super green paella has 5 different green veggies and takes no time at all to make.

Method

Step 1 of 4

Heat the oil in a wide pan on medium high heat and cook onion and garlic for 5 minutes to soften. Stir in the turmeric and paprika and cook for 2 minutes.

Step 2 of 4

Add the rice and stir to coat well. Pour over the vegetable stock and simmer for 10 minutes, stirring occasionally. Add the zucchini, asparagus and tenderstem broccoli and cook for 10 minutes, until the liquid has almost completely evaporated.

Step 3 of 4

Stir through the peas, spinach, lemon juice and zest, remove from the heat, cover with foil and leave to stand for 5 minutes.

Step 4 of 4

Scatter over the chopped parsley and cracked black pepper, add lemon wedges and serve.
