  • 2tablespoons five-spice powder
  • 1tablespoons white vinegar

Description

Crispy pork crackling with a touch of Chinese spice.

Method

Step 1 of 8

Score the pork rind half an inch apart.

Step 2 of 8

Pierce the meat with the needle meat tenderizer

Step 3 of 8

Rub salt into the meat, then the pepper and the five-spice powder.

Step 4 of 8

Rub at least 2 tablespoons of salt into the rind.

Step 5 of 8

Season overnight in the fridge, uncovered, rind side up.

Step 6 of 8

Once seasoned, place the pork belly on the wire rack, rind side down and cook at 180°C for 50 minutes in the oven.

Step 7 of 8

Then flip the pork belly, rind side up, rub 1 tablespoon of white vinegar on the rind, and cook at 240°C for 20 minutes in the oven.

Step 8 of 8

Allow to rest for 10 minutes, then ready to serve.
