- 3 brushed potatoes, scrubbed, thinly sliced
- 2tablespoons extra virgin olive oil
- 1 large tomato, cut into wedges
- 1 red onion, cut into wedges
- 85grams pitted Kalamata olives, drained
- 4 frozen basa fillets, thawed
- 1/2 lemon, thinly sliced
- 1teaspoons fennel seeds
- 1/4 bunch continental parsley, leaves picked
Description
Dinner is baked and on the table in under an hour with this basa fish traybake, featuring Kalamata olives, juicy tomatoes and the zinginess of lemon.
Method
Step 1 of 3
Preheat oven to 230°C/210°C fan-forced. Grease a large baking tray. Place potatoes in a large bowl. Add oil and toss to coat. Arrange potatoes on tray. Bake for 20 minutes or until golden.
Step 2 of 3
Add tomato, onion and olives to tray. Pat fish dry with paper towel. Arrange fish over vegetables and top with lemon slices. Sprinkle with fennel seeds and season with salt and pepper.
Step 3 of 3
Bake for a further 15 minutes, or until fish is cooked through. Sprinkle with parsley. Serve.
