  • 300grams dates, stone removed, roughly chopped (approx. 20 dates)
  • 3/4 cup white sugar
  • 2tablespoons honey
  • 1/2 cup lemon juice (you will need 2 large lemons)
  • 1 cup walnuts, roughly chopped

Method

Step 1 of 6

Place dates, sugar, lemon juice and honey into a non-stick saucepan over medium heat.

Step 2 of 6

Cook, stirring constantly until sugar dissolves and mixture comes to the boil.

Step 3 of 6

Simmer for 20 minutes or until all liquid has evaporated and mixture becomes thick and stiff.

Step 4 of 6

Remove from heat and fold in walnuts. Cool.

Step 5 of 6

Transfer to a sheet of baking paper and form into a log, 5cm thick and 18cm long.

Step 6 of 6

Cut into thin slices and serve with cheese.
